Norwegian Pancakes (Pannekaken)
Ingredients
- 3 eggs
- 1 1/2 cups milk
- 1 cup all-purpose flour
- 1 tsp sugar
- 1/4 tsp salt
- butter or cooking spray (for pan)
- topping of your choice (fresh berries, syrup or lingonberry jam)
Instructions
- Lightly mix eggs and milk in blender. Add flour, sugar and salt and blend until smooth and no lumps remain.
- Heat pan over medium-high heat. Coat pan with butter or cooking spray.
- Add 1/4 cup of pancake batter. Tilt pan to coat evenly with batter.
- Cook until the top of the pancake looks dry, roughly 30 seconds.
- Use spatula to carefully flip the pancake and cook for a few seconds on the other side until browned.
- Roll and serve with your favorite topping of fresh berries, syrup or lingonberry jam.
