Ingelfarkager (Ginger Cookies)
Ingredients
- 1 egg
- 1 cup lard
- 1 pint molasses or sorghum
- 1 Tbsp ginger
- 1 tsp soda
- flour (enough to roll out dough very thin)
Instructions
- Melt lard and mix with molasses while hot.
- Add other ingredients and roll out thin.
- Bake fast, take out of oven while still soft.
- Keeps long. This cookie has a shelf life of several months. Store in a cool dry place or freeze.
