Mom's Dumplings for Soup
Ingredients
- 2 medium potatoes
- 2 eggs
- 1/2 tsp salt
- 1/2 tsp baking powder
- 1/2 cup flour (about, amount varies depending on size of potatoes and eggs)
- soup broth (beef or chicken)
Instructions
- Boil 2 medium potatoes in soup broth until cooked through. Remove and mash with a fork.
- Add eggs, salt, baking powder, and about 1/2 cup flour to make a dumpling consistency. (Amount of flour varies depending on the size of the potatoes and eggs).
- Put in soup broth by small spoonfuls and cook until cooked through, for about 15 minutes.
- Good in either beef or chicken soup.
- These hold together well when reheated.
