Mom's Oatmeal Rolls
Ingredients
- 2 cups hot water
- 1 cup quick oatmeal
- 3 Tbsp Margarine
- 1/3 cup brown sugar
- 1 1/2 tsp salt
- 1 Tbsp yeast
- 1/3 cup warm (120 degrees) water
- 1 Tbsp white sugar
- 4 3/4 - 5 1/4 cups flour
Instructions
- Combine hot water, oatmeal, margarine, brown sugar, and salt.
- Cook for 1 minute - cool.
- In another bowl combine yeast, warm water, and white sugar.
- Combine mixtures and add 4 3/4 - 5 1/4 cup flour. The best rolls have the least amount of flour.
- Knead 6-8 minutes.
- Cover and let raise until doubled.
- Punch down & let rest 10 minutes.
- Shape into 18 balls and put into 2 9" round pans.
- Raise until double.
- Bake at 350°F for 20 minutes.
- Note: for dark rolls, substitute molasses for brown sugar.
