Scandinavian Almond Cake

Ingredients
- 1 1/4 cup sugar
- 1 egg
- 1 1/2 tsp almond extract
- 2/3 cups milk
- 1 1/4 cup flour
- 1/2 tsp baking powder
- 1 stick melted butter
- confectionery sugar (for sprinkling)
- sliced almonds (optional, for variation)
Instructions
- Use almond cake pan. Spray pan with Pam or cooking spray.
- Beat well: sugar, egg, almond extract, and milk.
- Add flour, baking powder, and melted butter. mix until well combined.
- Bake at 350 for 40-50 minutes. Edges must be golden brown.
- Let cool in pan before removing. Cake will break if removed too soon.
- Sprinkle with confectionery sugar.
- Variation: Before pouring batter into the pan, sprinkle sliced almonds on the bottom.
