Smultringers (Doughnuts)

Ingredients
- 1 1/2 cups hot, unseasoned mashed & riced potatoes
- 3 eggs
- 1 cup sugar
- 4 Tbsp soft shortening
- 2 1/2 cups sifted all-purpose flour
- 4 tsp baking powder
- 1 tsp salt
- 1 tsp mace
- fat (for frying)
Instructions
- Prepare potatoes. Beat eggs, sugar and shortening together; stir in potatoes; beat until blended.
- Sift flour, baking powder, salt and mace together; blend into egg mixture.
- Chill 1 hour.
- Roll out dough on floured board until it is 1/4 inch thick. Cut with doughnut press.
- Fry in hot fat (375°F) until golden brown.
- Drain on absorbent paper towels.
