Acini di pepe Salad
Ingredients
- 1 cup Acini di pepe macaroni (cook, drain & cool)
- 1 20 oz can crushed pineapple
- 1 8 oz can mandarin oranges
- 2 cups juice drained from fruits
- 2 eggs, beaten
- 1/4 - 1/2 cup sugar
- 2 Tbsp cornstarch
- 1 cup mini marshmallows
- 8 oz Cool Whip
Instructions
- Cook, drain and cool Acini di pepe macaroni.
- Drain juice from pineapple and mandarin oranges.
- Thicken 2 cups juice with sugar, cornstarch and beaten eggs.
- Mix thickened juice with macaroni and fruit and let set overnight.
- Next day fold in marshmallows and Cool Whip.
- Note: this is great to take along when going to a potluck!!
