Sauerkraut Salad
Ingredients
- 6 cups sauerkraut, drained (for family size (2 #2 cans for 300))
- 2 cups chopped celery (for family size (8 C for 300))
- 1 cup chopped onion (for family size (4 C for 300))
- 1/2 cup chopped green pepper (for family size (2 C for 300))
- black pepper to taste
- 4 cups sugar (for dressing)
- 2 cups cider vinegar (for dressing)
Instructions
- Drain sauerkraut. Add celery, onion, green pepper, and black pepper to taste.
- For dressing: boil sugar and cider vinegar for 2 minutes.
- Let cool to room temperature.
- Mix dressing with salad and refrigerate overnight.
- Keeps well!!
