Fattigmann (Poor Man's Cookie)

Ingredients
- 4 eggs, well beaten
- 5 tsp sugar
- 1 tsp brandy
- 1 tsp lemon extract
- 1/4 tsp salt
- 1 cup flour or a little more to make a soft dough
- lard (for frying)
- powdered sugar (for dusting)
Instructions
- Beat eggs, add extracts and salt and mix until well combined.
- Stir in flour to make a soft dough. Handle as little as possible.
- Roll out on a floured cloth and cut into 3" x 3" diamond shapes with a pastry cutter.
- Fry in hot lard (350°F) until lightly browned.
- Drain on paper towels and dust with powdered sugar when cool.
- Store in airtight container.
