Potato Lefse
Ingredients
- 2 cups riced potatoes
- 3 Tbsp cream
- 2 Tbsp butter
- 1 tsp salt
- 1 Tbsp sugar
- 1 cup flour
Instructions
- Boil potatoes (use a dry potato like russets). Rice potatoes while warm.
- Measure the potatoes. Add butter, salt, cream, sugar to the warm potatoes.
- Let set overnight or until cooled.
- Next morning, rice again (2nd time) and add flour.
- Take about 1/3 cup and form into a ball.
- Flour your rolling board with flour and press down the dough slightly on the board.
- Roll into a thin circle like pie crust.
- Place on lefse griddle and bake at 450°F on one side.
- When bubbles appear, turn and bake other side.
- Remove from griddle, place in a cloth to keep moist.
- When the lefse are completely cold, they can be frozen, wrapped in wax paper and placed in zip lock bags.
