Selbu Lefse

Ingredients
- 5 cups flour
- 2 cups milk, scalded
- 4 heaping Tbsp shortening (melted in milk)
- 3-4 Tbsp sugar
- 1 tsp salt
- 1 lb butter (for filling)
- 1 cup sugar (for filling)
- 1/2 cup half & half (for filling)
Instructions
- Form dough into balls about 1-inch in diameter. Roll as thin as possible.
- Cook on dry griddle (475°F) turning when one side is lightly browned.
- Place finished lefse between damp towels to keep moist. Sprinkle with water to soften if necessary.
- For filling: Cream butter. Gradually add heated half & half. Add sugar and mix until well combined.
- Spread filling on half of lefse, fold over other half, trim uneven edges and cut into wedges.
