Søtsuppes (Fruit Soup)
Ingredients
- 1 cup pitted dried prunes
- 1 cup dried apricots
- 1/4 cup light or dark raisins
- 1/2 lemon, sliced
- 3 (4-inch) cinnamon sticks
- 1/4 cup sugar
- 3 Tbsp quick-cooking tapioca (may substitute with pearl tapioca; if so, soak overnight and cook before adding)
- 1/2 can grape juice concentrate
- 1 cup pared, cubed apples
- 6 cups water
Instructions
- Combine all ingredients except apple cubes in 3-quart saucepan. Add 6 cups water.
- Bring to a boil stirring. Reduce heat and simmer covered 20 minutes, or until fruit is tender and tapioca is cooked. Stir occasionally.
- Add apple cubes. Simmer, covered, 5 more minutes.
- Remove cinnamon. Serve warm or cold.
