Swedish Raspberry Almond Bars
Ingredients
- 3/4 cups butter, softened
- 3/4 cups powdered sugar
- 1 1/2 cup flour
- 3/4 cups seedless raspberry jam
- 3 egg whites
- 6 Tbsp sugar
- 1/2 cup coconut
- 1 cup sliced almonds (divided)
- powdered sugar (for sprinkling)
Instructions
- Cream together butter, powdered sugar, and flour. Pat lightly into a 9x13 pan and bake for 18-20 min at 350°F.
- Spread raspberry jam on top of first layer.
- Beat egg whites until soft peaks, beat in sugar until stiff peaks.
- Fold in coconut & 1/2 cup almonds. Spread over jam.
- Sprinkle with the other 1/2 cup almonds.
- Bake at 350°F for 18-22 min until golden brown.
- Sprinkle with more powdered sugar when cool.
- Cut into pieces 1 inch x 2 inches.
