Lefse

Ingredients
- 5 heaping cups instant potatoes (Potato Pearls)
- 9 Tbsp sugar
- 7 cups water
- 1 cup milk
- 1 cup evaporated milk (1 can plus enough water to make a cup)
- 1 stick butter
- pinch of salt
- 11 Tbsp oil
- 2 cups flour (per batch)
Instructions
- Mix potatoes and sugar together in bowl.
- In kettle, put water, milk, evaporated milk, butter and salt. Heat until butter is melted. DO NOT BOIL.
- Pour liquid mixture over potato mix and let stand 1 minute.
- Combine with 11 tablespoons oil; mix until well combined.
- Divide into 2 bowls (about 5 cups in each). Pat down around sides.
- Take double paper towels and lay on top, pressing down on sides. This will take out some moisture.
- Set overnight in refrigerator.
- When ready to roll, add 2 cups flour to mixture. Mix together and make into walnut-sized balls.
- Roll out and grill. Cool in towels.
- Start other batch while the first cools.
